Since my favourite style of beer is a pale ale with a citrussy hoppy flavour - but had already done 2 recently that were quaffing strength - I thought I'd make a proper sipping beer. So the name comes from a combination of American Pale Alei & India Pale Ale.
Mash - 65°C strike temperature, then back upto 67°C in just a few mins & held there for 90 mins. Final beer volume 13 litres.
5.05 Kg pale malt
Boil 1 hour 15mins
Cascadei hops (7.0.0% alpha acid): 50g at start of boil, 30 after 35 mins, 20 after 1 hour.
Amarillo hops (9.4% alpha acid): 50g at start of boil, 30 after 35 mins, 20 after 1 hour.
Using the very handy recipe formulator, & a hydrometer the alcohol level should be around 6.0% (from an OG of 1056) & bitterness at a staggering 271 IBUi. Yeast used: Safale US-05.
Bottled after 12 days fermenting.
Verdict on bottling: Very bitter with masses of zesty grapefruit flavour & very dry.
Verdict after 4 weeks: a full bodied extremely pale beer with a very dominant zesty hoppiness & just a little malt sweetness. Less grapefruit now & more generic citrus fruit.
Verdict after 4 months: Clarity is still a problem, but the beer is still great with a very dry citrus zesty grapefruit flavour dominant.
