Running out of homebrew to share was looking likely, but I managed to find just over 3 hours to brew 2 batches of a stock ale so that when I have more time next week I can bottle it & perhaps brew a more involved beer. This batch was brewed outdoors on a really hot day as a good rolling boil would have made the kitchen unbearable.
Mash - 64°C strike temperature, then upto 68°C over 15 mins & held there for a further 45 mins. 20 litres brewed then split into 2 equal batches & topped upto 15 litres each.
2 tablespoons of citric acid
6.03 Kg pale malt
Boil 1 hour
Cascadei hops (7.6% alpha acid): 50g at start of boil, 30g after 30mins & 20g after 50mins.
Amarillo hops (9% alpha acid): 50g at start of boil, 30g after 30mins & 20g after 50mins.
Fermented using Safale US-05 dried yeast.
Here is where the beers differ: American Pale Alei was bottled after 6
days of fermenting at room temperature & should be around 4.6% alcohol & have a bitterness at 83 IBUi. Florida Pale Ale was decanted into a clean vessel on the 6th day of fermentation & 200g of sucrose plus the zest of a pink grapefruit added - the zest was scalded in a little boiling water before adding. This should give an alcohol level of 5.1% & 83 IBU.
American Pale Ale on bottling: strong grapefruit citrus flavour & aroma, but a little thin. An extremely pale yellow beer.
Florida Pale Ale on bottling: still a little sweetish from the added sucrose, giving it the mouthfeel of more body. Loads of grapefruity, zesty flavours & aromas. Another extremely pale yellow beer. Wonderfull.
American Pale Ale - Verdict after 3 weeks: almost clear already, a little thin, dryish, masses of hoppiness & good bitterness. Has the stereotypical grapefruit of Amarillo & Cascade hops in spades.
Florida Pale Ale - Verdict after 3 weeks: much as the APA but fuller bodied, suprisingly. The sugar should ferment away completely adding no extra body & the alcohol created should make the beer thinner.
American Pale Ale - Verdict after 9 weeks: the clarity hasn't much improved since week 3 & whilst not full bodied, it doesn't have quite such a thin mouthfeel. Tastes better served from the fridge. Still a good quaffing beer though.
Florida Pale Ale - Verdict after 9 weeks: similar clarity problem as APA, but a fuller mouthfeel to this beer still. Whilst a little dissapointing, its still a good beer when served from the fridge.
Verdict after 4 months - dissapointingly, neither beer cleared properly. Still they both went down well with the Florida Pale Ale being just a touch better with its slightly better body.
